Prawn Rissois


Ingredients Of Prawn Rissois

For the pastry:



1 and 1/2 cup flour

1 cup water

1 Tbsp butter

Salt to taste


For filling:

10-12 prawns - boiled cleaned and finely chopped

1 onion - finely chopped

3 Tbsp butter

4-5 Tbsp plain flour

2 cups milk

1/4 tsp pepper powder

1 slice cheese

Salt


To finish:

2 eggs, lightly beaten

1 cup bread crumbs (or semolina)

Oil, to deep fry


For the Filling:

Take a fry pan saute onions with butter then add the prawns.

Then add the flour and mix well. Pour milk and cook for 2 min stirring constantly.

Add the salt and pepper . Mix well and keep aside to cool . Lastly add finely chopped cheese.

For the Pastry:

Take water and butter in a pan and bring to a boil.. Once the butter melts, add salt. Now add flour, all at once and stir vigorously until the mixture leaves the side of pan and form a small ball .Transfer this mixture to a board and knead a little. Cover and keep aside for half n hour. Now, roll the pastry dough with the help of a rolling pin until fine and smooth. Cut into small round circles. Place a spoonful of prawn filling on the pastry,. fold the pastry and seal the edges.Dip in the beaten eggs and then in breadcrumbs. Deep fry until golden brown and serve.
