Goan Baath ( Bakt) Coconut and Semolina Cake

Ingredients

250 gms freshly grated coconut

250g semolina

200 gms sugar

4 tsps water

125 gms butter

3 egg yolks (beaten )

1/2 tsps baking powder

1/4 tsps cardamon powder

Method

Mix together water sugar

Once sugar dissolves add butter

Mix well until nice and fluffy

Next add the egg yolks.

Mix well.

Next add semolina and cardamon powder. Mix well.

Leave the mixture overnight.(Preferably)

For baking

Add the baking powder give a quick stir. Put the mixture in a grease tin. Preheat oven to 350 deg F (180 deg C) . Bake for about 30 minutes. Further ,cover the top of baking tray with a foil and bake it for another 10-12 minutes till a toothpick inserted in the center of baath comes out clean.

Remove from oven, let it rest and cool to room temperature. Remove baath slice ... serve ... enjoy.
